Zucchini Casserole with Stuffing Mix

Another Great Zucchini Recipe ~ Enjoy!

2 pounds zucchini or 6 cups, cut into chunks
½ cup chopped onion
1 can cream of celery soup, (do not add water)
1 cup Mayonnaise or sour cream (I use Mayonnaise)
1 cup grated carrots (I use 2 carrots and chop them small in food processor)
1-8 ounce package Chicken Flavor Stove Top Stuffing (OMIT THE WATER)
1 stick melted butter

Preheat oven to 400º. Spray a 2 quart casserole dish with Pam cooking spray.

Slice zucchini into chunks and chop onion. Place both in an appropriate size sauce pan. Cover with water enough to cover zucchini. Cook zucchini and onion about 5 - 6 minutes in boiling water. (Let this come to a boil before you start timing.) Drain and set aside. Or sometimes I sauté them in a skillet till tender.

In a bowl mix soup, mayonnaise or sour cream, grated carrots and the cooked zucchini and onion mixture. Mix well. Then add the DRY Stove Top stuffing mix. Pour in the melted butter and mix well.

Place this mixture into the Pam sprayed 2 quart Glass casserole dish. Bake for about 50 - 60 minutes or until lightly browned and the casserole is set and bubbly.

Hint: Doubled, this recipe will fit in a 4 quart casserole dish. Will accompany most any kind of meat dish.

Good substitute for potatoes or rice.
